The Chef’s Blackbox is a new feature of Carrot by Moonlight, introduced as part of our fundraising efforts to support Arts on the Ave’s year-round arts programming and social initiatives.
Each participating chef receives a mystery box of ingredients sourced from the Bethel Food Pantry and partnered grocery. Chefs are challenged to craft an original tasting dish using only what’s provided, along with a few basic staples or tools of their choice.
The chef’s blackbox highlights the ingenuity and generosity of our culinary community, while raising awareness around food access and celebrating the everyday ingredients that nourish our neighbours. It's a creative, collaborative, and heartfelt expression of what it means to feed and care for one another.
The Chef’s Blackbox is more than a cooking event — it’s a celebration of community, resourcefulness, and the transformative power of food and art.
Meet our Blackbox Chefs
Kelsey Johnson
Kelsey Johnson is relatively new to the world of post-secondary education having recently joined the team of Culinary Instructors at the Northern Alberta Institute of Technology. Prior to Nait, she was part owner and head chef of Café Linnea, ranked as one of Canada’s Best New Restaurants when it opened in 2016, and has appeared as a guest judge on Food Network Canada’s, “Wall of Chefs”. One of her main culinary focuses is on sustainability and cooking with seasonal ingredients grown in and around Edmonton.
Spencer Thompson
As a native of Ardrossan, Alberta, Spencer's affinity for the culinary world began at a young age, nurtured by his experiences on his best friend's family farm and participation in the local 4H program. His formal education in culinary arts at the Northern Alberta Institute of Technology laid the foundation for his apprenticeship under the esteemed Chef Sonny Sung.
Spencer went on to hone his skills in some of Edmonton's top kitchens, further deepening his connection with Alberta's local produce and organic farming practices.
As Executive Chef, Spencer's approach to food is rooted in his heritage, travels, and commitment to showcasing the finest ingredients. His dishes are a blend of traditional techniques and modern flair, designed to elevate the culinary experience.
When not leading the kitchen, Spencer can be found exploring the great outdoors, paddleboarding on the North Saskatchewan river, or making snacks for his wife Melissa.
Mystery Chef
Our Mystery Chef Blackbox contender brings creativity, heart, and a deep respect for community to the kitchen. While their identity remains under wraps for now, one thing is certain: they’re ready to take on the challenge of transforming a mystery box of humble ingredients into something extraordinary.

Priya Winsor
Founder & Chocolatier, Compass Chocolates
Priya Winsor is a certified chocolatier and award-winning pastry chef whose passion for food goes beyond the kitchen. The daughter of immigrants, Priya grew up surrounded by flavors from around the world, nurturing a global palate and a deep respect for the way food connects people. For her, the table has always been more than a place to eat — it’s where strangers become friends and stories are shared.
Priya holds a Diploma in Pastry and Baking from the Northern Alberta Institute of Technology (NAIT), where she was recognized as Best Baker and won the Chocolate Competition during her studies. She later earned her certification from the Chocolate Academy Montreal. In 2024, NAIT honoured her as part of its NAIT Celebrates Alumni series, recognizing her dedication to community and philanthropy.
As the founder of Compass Chocolates, Priya combines her love of travel, storytelling, and artisanal chocolate to create unique confections inspired by people and places near and far. She also leads with heart — her Hearts of COMPASSION initiative raises funds for local food banks, supporting those who are loving our communities in the most tangible way.
